IIMR has developed a process for manufacture of Sorghum instant khichidi mix which is convenience foods using with sorghum substituting the main cereal by dry blending of the ingredients. It is more suitable for consumption in the present health scenario to combat free-radicals, which cause obesity and other chronic diseases, as it is rich in phytochemicals and micronutrients.
